Low Fat Minestrone Soup Recipe


1 – 2 cups canelli beans (or kidney, garbonzo, etc.)
1 cup wild rice (or brown rice,vegan noodles etc)
3 cups chopped potatoes (I used red potatoes, but your pick)
3 cups chopped roma tomatoes (+1 cup canned tomatoes or tomato sauce)
2.5 cups chopped zucchini (or other summer squash)
2 cups brussel sprouts
1 cup chopped baby bella mushrooms (or portobello or white etc)
1 cup chopped carrots
2 ribs celery
1 red or yellow bell pepper
2 cups spinach
Black pepper (to taste)


Bay Leaves
(OR use dry Italian Mix, if you prefer)

    My husband just happened to watch forks over knives this last December and got me to watch and our eyes were totally opened on this whole food nutrition thing. So we are just brand new to this and I am so glad you guys are so sweet to us “babies” and don’t make people feel stupid. You guys are literally changing my life, my husbands life and even my child’s life. We even have our parents now transitioning to a whole food plant based foods. It’s really hard at times and it takes time to re-do your way of thinking.

    Can you please address other food groups? Your diet seems to be all carbs, which seems to be working for you but are you saying this is the only way to eat as a diabetic? Plant based also includes healthy fats, nuts , seeds , legumes etc…please give your opinion on this
